Just 16 Days until Mother's Day!!

I'm a Mom and I'm so happy that there is a special day to celebrate all of us who fill this awesome role! I have lost my Mom and several others whom I honored on this day but the memory of their love still fills my heart to the brim!

Thought I'd share a wonderful recipe for Mother's Day Brunch! This is to be prepared the night before, refrigerated and then baked just before brunch!!

FRENCH TOAST SOUFFLE
16 oz. cream cheese 16 slices of French bread, trim crusts & cube
12 eggs 2 cups milk 1/2 cup maple syrup
nutmeg and cinnamon
Put a layer of 1/2 of the French bread cubes in the bottom of a 9 X 13 baking pan. Cube cream cheese and place on top of the bread cubes. Sprinkle with nutmeg and cinnamon. Add the remaining bread cubes on top. Beat eggs, add milk and maple syrup; pour over top of bread and cheese. Refrigerate overnight.
Heat oven to 375 *F. Sprinkle more cinnamon and nutmeg on top and bake for 45 minutes. Serve with warmed maple syrup.
Yummmmmm!!

LITTLE SMOKIES
1 lb. Little Smokies 3/4 box of brown sugar 1 lb. bacon
Cut bacon slices in thirds. Wrap each Little Smokie with bacon and secure with a toothpick. Place on a baking sheet and sprinkle generously with brown sugar.
Bake 2 hours at 250*F
*These are also great as an appetizer!*

Whatever your tradition, eat at home, go to a favorite place for brunch, lunch or dinner; may you each enjoy a wonderful day with those you love the most!!

It's good to have had a lot of love to remember...I'll be doing a lot of that on Mother's Day and also so thankful for my children who will celebrate ME !!! LOL
